Peach Honey BBQ Chicken Sliders

1 lb boneless, skinless chicken thighs

1 cup peach preserves

1/2 cup honey

1/4 cup apple cider vinegar

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for heat)

12 slider buns

1 cup coleslaw mix

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar (for coleslaw)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Marinade: In a bowl, whisk together the peach preserves, honey, apple cider vinegar, Dijon mustard, minced garlic, smoked paprika, salt, black pepper, and cayenne pepper (if using). Reserve 1/2 cup of this marinade for later use on the cooked chicken.

    Marinate the Chicken: Place the chicken thighs in a plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish, then refrigerate for at least 1 hour, or ideally, overnight to let the flavors infuse.

      Cook the Chicken: Preheat your grill or stovetop grill pan over medium heat. Remove the chicken from the marinade and discard the used marinade. Grill the chicken for about 6-8 minutes per side or until fully cooked (internal temperature should reach 165°F / 74°C).

        Finish the Chicken: In the last few minutes of cooking, brush the reserved marinade over the chicken for extra flavor and glaze. Once done, remove the chicken from the heat and let it rest for a few minutes.

          Prepare the Slaw: In a separate bowl, mix the coleslaw mix with mayonnaise and apple cider vinegar. Stir until well combined and set aside.

            Assemble the Sliders: Slice the slider buns in half. On the bottom half of each bun, place a grilled chicken thigh. Top with a generous scoop of the coleslaw mixture, then place the top half of the bun over it.

              Serve: Arrange the sliders on a platter and garnish with fresh cilantro or parsley if desired. Serve immediately while the chicken is warm and juicy.
