Peach & Strawberry Chia Jam

2 ripe peaches, pitted and diced

2 cups fresh strawberries, hulled and chopped

1/4 cup pure maple syrup (adjust for sweetness)

2 tablespoons chia seeds

1 tablespoon lemon juice

1 teaspoon vanilla extract

A pinch of salt

Prepare the Fruit: In a medium saucepan, combine the diced peaches and chopped strawberries. Use a fork or potato masher to break down the fruit slightly, releasing their juices.

    Sweeten the Mixture: Add the maple syrup, lemon juice, vanilla extract, and a pinch of salt to the fruit in the saucepan. Stir well to combine all ingredients.

      Cook the Jam: Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally, for about 8-10 minutes. The fruit should soften, and a sauce-like consistency will begin to form.
