Peanut Butter Banana Oat Bars

1 cup rolled oats

1 ripe banana, mashed

½ cup natural peanut butter (or almond butter)

¼ cup honey or maple syrup

⅓ cup chopped nuts (walnuts or almonds)

¼ cup mini chocolate chips (optional)

¼ teaspoon salt

½ teaspoon cinnamon

1 teaspoon vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, salt, and cinnamon. Stir well to ensure the dry ingredients are evenly distributed.

      Combine Wet Ingredients: In a separate bowl, mix the mashed banana, peanut butter, honey (or maple syrup), and vanilla extract until smooth and creamy.

        Combine Both Mixtures: Pour the wet ingredient mixture into the dry ingredient bowl. Stir until all the ingredients are well combined. If desired, fold in the chopped nuts and chocolate chips for added texture and flavor.

          Transfer to Baking Dish: Spoon the mixture into the prepared baking dish and spread it evenly, pressing down firmly to create a compact layer.

            Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown and the center is set.

              Cool and Slice: Remove the bars from the oven and allow them to cool in the baking dish for about 10 minutes. Then lift the bars out using the parchment overhang and let them cool completely on a wire rack. Once cooled, slice into squares or rectangles.
