2 cups old-fashioned rolled oats

1 cup unsweetened peanut butter

1/2 cup honey

1/2 cup brown rice cereal (or other crispy cereal)

1/2 cup mini chocolate chips (optional)

1/3 cup chopped nuts (almonds or walnuts)

1/2 tsp vanilla extract

A pinch of salt

Prepare the Pan: Line an 8x8 inch square baking pan with parchment paper, allowing some overhang for easy removal later. Lightly grease the parchment paper with a little non-stick spray or oil.

    Mix the Wet Ingredients: In a medium saucepan over low heat, combine the peanut butter and honey. Stir frequently until the mixture is smooth and well blended. Remove from heat and stir in the vanilla extract and pinch of salt.

      Combine the Dry Ingredients: In a large mixing bowl, combine the rolled oats, brown rice cereal, chopped nuts, and optional chocolate chips. Stir until evenly mixed.
