1 cup creamy peanut butter

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

2 cups old-fashioned rolled oats

1/2 cup chocolate chips (optional)

1/2 cup chopped nuts (such as walnuts or pecans, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the peanut butter, brown sugar, and granulated sugar. Mix until smooth and creamy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until fully incorporated.

      Combine Dry Ingredients: In a separate bowl, whisk together the baking soda and salt. Gradually add this to the wet mixture and mix until combined.

        Add Oats: Fold in the old-fashioned rolled oats until evenly distributed throughout the dough. If you’re using chocolate chips and/or nuts, this is the time to add them as well – fold them into the mixture.

          Scoop the Cookies: Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie to allow for spreading.

            Bake: Bake for 10-12 minutes, or until the edges are lightly golden. The cookies will look slightly underbaked in the center; they will firm up as they cool.

              Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
