1 cup Arborio rice

4 cups whole milk

1 cup pear puree (from about 2 ripe pears)

1/2 cup sugar (or to taste)

1/2 teaspoon ground cardamom

1/4 teaspoon salt

1/2 teaspoon vanilla extract

2 ripe pears, diced (for topping)

1/4 cup chopped pistachios (for garnish)

Ground cinnamon (for garnish, optional)

Instructions
 

Prepare the Pear Puree: Peel, core, and chop two ripe pears. Place them in a saucepan with a splash of water and simmer over medium heat until soft, about 10 minutes. Puree in a blender until smooth; set aside.

    Cook the Rice: In a large saucepan, combine the Arborio rice and 1 cup of milk. Cook over medium heat, stirring frequently until the rice absorbs the milk, about 5-7 minutes.

      Add Remaining Ingredients: Gradually add the remaining 3 cups of milk, sugar, pear puree, ground cardamom, and salt to the rice mixture. Increase the heat slightly, and bring to a simmer while stirring frequently.

        Simmer the Pudding: Lower the heat and continue to cook, stirring occasionally, for about 25-30 minutes, or until the rice is creamy and al dente. If the pudding becomes too thick, add a little more milk to reach your desired consistency.

          Finish with Vanilla: Once the rice is cooked and the mixture has thickened, remove from heat and stir in the vanilla extract. Taste and adjust the sweetness or cardamom per your liking.

            Serve: Ladle the rice pudding into bowls. Top with diced pears, a sprinkle of chopped pistachios, and a light dusting of ground cinnamon if desired. Serve warm or chilled.
