For the Crust:

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

1/2 teaspoon ground cinnamon

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1/4 cup sour cream

For the Pecan Topping:

1 cup pecans, chopped

1/2 cup light corn syrup

1/4 cup brown sugar, packed

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1/4 teaspoon salt

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9x13 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, melted butter, sugar, and cinnamon until combined. Press the mixture firmly into the bottom of the prepared baking dish. Bake for 8-10 minutes until set and lightly browned. Remove from oven and let cool slightly.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Add the granulated sugar and vanilla extract, mixing until well incorporated. Add the eggs one at a time, mixing on low speed after each addition until just combined. Finally, mix in the sour cream until smooth.

        Layer the Cheesecake: Pour the cheesecake filling over the cooled crust, spreading it evenly with a spatula.

          Prepare the Pecan Topping: In a separate bowl, combine the chopped pecans, corn syrup, brown sugar, melted butter, vanilla extract, and salt. Stir until the pecans are well coated.

            Add the Pecan Layer: Pour the pecan topping over the cheesecake layer, evenly distributing the pecans. Using a spatula, gently pat down the pecans into the filling.

                Cool and Chill: Remove the cheesecake bars from the oven and let them cool in the pan at room temperature for about 1 hour. Then, transfer them to the refrigerator and chill for at least 4 hours or overnight for the best results.
