1 cup unsweetened applesauce

1 teaspoon vanilla extract

1 ½ cups diced apples (peeled and cored, about 2 medium apples)

½ cup chopped walnuts or pecans (optional)

1 tablespoon brown sugar (for topping)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with non-stick spray.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, ground cinnamon, and salt. Make sure there are no lumps.

      Mix Wet Ingredients: In another bowl, beat the eggs and then mix in the applesauce, vegetable oil, and vanilla extract until well combined.

        Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are perfectly fine.
