2 boneless, skinless chicken breasts

1 cup fresh basil pesto (store-bought or homemade)

4 slices of fresh mozzarella cheese

1 large ripe tomato, sliced

1 ripe avocado, sliced

4 slices of sourdough or ciabatta bread

2 tablespoons balsamic glaze

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Prepare the Chicken: Season the chicken breasts with salt and pepper. In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (75°C). Remove from the skillet and let them rest for a few minutes before slicing.

    Assemble the Sandwich: On one slice of bread, spread about 2 tablespoons of basil pesto. Layer with sliced chicken, fresh mozzarella slices, tomato, and avocado. Drizzle a little balsamic glaze over the top and add more pesto if desired.

      Top It Off: Place another slice of bread on top to close the sandwich. Repeat this process for the second sandwich.
