Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

1 teaspoon vanilla extract

For the cheesecake filling:

16 oz (2 packages) Philadelphia cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

½ cup sour cream

2 tablespoons all-purpose flour

Zest of 1 lemon (optional, for a hint of citrus)

For the topping:

Fresh berries (strawberries, blueberries, or raspberries)

Optional: Whipped cream for serving

Instructions

Preheat the Oven: Begin by preheating your oven to 325°F (163°C). Line a 9x13-inch baking pan with parchment paper, allowing the paper to hang over the edges for easy removal later.

Make the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Stir until the mixture is fully combined and resembles wet sand. Press the mixture evenly into the bottom of the prepared baking pan. Bake for 10 minutes, then remove from the oven and let it cool slightly while you prepare the cheesecake filling.

Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened Philadelphia cream cheese using an electric mixer on medium speed until smooth and creamy, about 2 minutes. Gradually add the granulated sugar, beating until well blended.

Add Eggs and Flavors: Add the eggs, one at a time, mixing on low speed just until incorporated. Be careful not to overmix. Next, add the vanilla extract, sour cream, flour, and lemon zest (if using). Mix until everything is well combined and the batter is smooth.

Pour and Spread: Pour the cheesecake filling over the pre-baked crust, spreading it evenly with a spatula.

Bake: Bake in the preheated oven for about 25-30 minutes, or until the edges are set but the center still has a slight jiggle to it. Turn off the oven and crack the door open, letting the cheesecake cool in the oven for an additional hour. This helps prevent cracking.

Chill: After the cheesecake has cooled, remove it from the oven and refrigerate it for at least 4 hours, or overnight for best results.

Slice and Serve: Once chilled, carefully lift the cheesecake out of the pan using the parchment paper. Cut into bars and serve with fresh berries and whipped cream, if desired. Enjoy your creamy dreamy dessert!
