2 large chicken breasts, cut into 1-inch cubes

1 medium fresh pineapple, peeled, cored, and cut into 1-inch cubes

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into wedges

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons olive oil

1 tablespoon fresh ginger, grated

2 garlic cloves, minced

1 teaspoon black pepper

1 teaspoon salt

1/2 teaspoon crushed red pepper flakes (optional, for heat)

Instructions
 

Marinate Chicken: In a mixing bowl, combine soy sauce, honey, olive oil, grated ginger, minced garlic, black pepper, salt, and crushed red pepper flakes. Add the cubed chicken to the marinade, mix well, and let marinate for at least 30 minutes (or up to 2 hours for more flavor) in the refrigerator.

    Prepare Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill to medium-high heat.

      Assemble Skewers: Once the chicken has marinated, start threading the skewers. Alternate pieces of marinated chicken with pineapple cubes, red bell pepper, yellow bell pepper, and onion wedges until the skewers are filled.

        Grill Skewers: Carefully place the skewers on the grill. Cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (75°C).

          Serve: Once cooked, remove the skewers from the grill and let them rest for a few minutes. Serve hot with a side of rice or a fresh salad, and enjoy your tropical flavors!
