Ingredients

1 cup oats (gluten-free if preferred)

1/2 cup cottage cheese (or Greek yogurt for a dairy-free option)

1/2 cup egg whites (or 2 large eggs)

1 scoop vanilla or unflavored protein powder

1 tablespoon almond flour (or coconut flour)

1 tablespoon honey or maple syrup (optional, for sweetness)

1 teaspoon baking powder

1 teaspoon vanilla extract

A pinch of salt

Cooking spray or coconut oil (for greasing the waffle maker)

Instructions

Blend the Ingredients: In a blender, combine the oats, cottage cheese, egg whites, protein powder, almond flour, honey (if using), baking powder, vanilla extract, and salt. Blend until the mixture is smooth and creamy. If the batter is too thick, add a splash of water or milk to reach your desired consistency.

Preheat the Waffle Maker: Turn on your waffle maker and preheat it according to the manufacturer’s instructions. Lightly grease the waffle plates with cooking spray or melted coconut oil to prevent sticking.

Cook the Waffle Bites: Pour a small amount of the batter onto the preheated waffle maker—enough to cover the surface but not overflow. Close the lid and cook until the waffle is golden brown and crispy, typically about 3-5 minutes depending on your waffle maker. Remove and repeat with the remaining batter.

Serve: Allow the waffle bites to cool slightly before serving. They can be enjoyed plain or with toppings such as fresh fruit, a dollop of yogurt, nut butter, or a drizzle of syrup.

Store: Leftover waffle bites can be stored in an airtight container in the fridge for up to 3 days or frozen for later use. To reheat, simply pop them in the toaster or microwave until warm.

Prep Time: 10 minutes | Total Time: 25 minutes | Servings: 2-4 (depending on portion size)
