1 cup pumpkin puree (fresh or canned)

2 ripe bananas, mashed

½ cup granulated sugar

½ cup brown sugar, packed

1/3 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

½ teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

¼ teaspoon ground cloves

½ cup chopped walnuts or pecans (optional)

½ cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners or lightly grease it.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, mashed bananas, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Use a whisk to mix the ingredients until well combined and smooth.

      Blend Dry Ingredients: In a separate bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves. This ensures even distribution of the leavening agents and spices.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are fine.
