1 cup canned pumpkin puree

2 cups all-purpose flour (plus extra for dusting)

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon dried sage (or 2 teaspoons fresh sage, finely chopped)

1/4 teaspoon black pepper

1/4 cup olive oil

1/2 cup warm water (approximately 110°F or 43°C)

4 oz fresh mozzarella cheese, sliced

Fresh sage leaves for garnish

Optional: Olive oil for drizzling

Prepare the Dough: In a large mixing bowl, combine the flour, baking powder, salt, dried sage, and black pepper. Mix well, then create a well in the center and add the canned pumpkin puree and olive oil.

    Mix and Knead: Gradually add warm water, mixing with a spoon or your hands until it forms a cohesive dough. Transfer to a lightly floured surface and knead for about 5 minutes until smooth and elastic. If the dough is too sticky, add a bit more flour as needed.

      Rest the Dough: Shape the dough into a ball, place it in a bowl, cover with a damp cloth, and let it rest for 30 minutes.

        Preheat the Oven: While the dough is resting, preheat your oven to 475°F (245°C) and place a baking stone or baking sheet inside to heat up.

          Roll Out the Dough: After resting, divide the dough into four equal portions. On a floured surface, roll each portion into a thin flatbread shape, about 1/4 inch thick.

            Assemble the Flatbreads: Carefully remove the hot baking stone/sheet from the oven and transfer one flatbread onto it. Arrange the sliced mozzarella evenly over the top. Repeat with remaining flatbreads.

              Bake: Bake for 10-12 minutes, or until the flatbreads are golden and the cheese is bubbly and slightly browned.

                Garnish: After baking, remove from the oven and let cool slightly. Drizzle with olive oil if desired and top with fresh sage leaves.
