Pumpkin Spice Muffins

1/2 cup vegetable oil (or melted coconut oil)

1/2 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

2 teaspoons pumpkin pie spice (or a mix of cinnamon, nutmeg, and ginger)

1/2 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans) or chocolate chips (optional)

1/4 cup old-fashioned oats for topping (optional)

A sprinkle of cinnamon sugar for finishing (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk well until fully combined and smooth.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.

        Mix Together: Gradually add the dry ingredient mixture into the wet ingredients, mixing gently until just combined. Be careful not to overmix. If using nuts or chocolate chips, fold them in at this point.

          Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full. If you’re using oats for topping, sprinkle a small amount on top of each muffin.

            Add Topping (Optional): If you like, sprinkle some cinnamon sugar on top of each muffin for added sweetness and crunch.

              Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
