1 cup rolled oats

1 cup unsweetened almond milk (or any preferred milk)

½ cup canned pumpkin puree

1 tablespoon maple syrup (adjust to taste)

1 teaspoon pumpkin pie spice (or a mix of cinnamon, nutmeg, ginger, and cloves)

½ teaspoon vanilla extract

¼ teaspoon sea salt

Optional toppings: chopped pecans, shredded coconut, a dollop of yogurt, or more maple syrup

Instructions
 

In a medium mixing bowl, combine the rolled oats, almond milk, canned pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and sea salt. Whisk together until all ingredients are well incorporated.

    Divide the mixture evenly into two mason jars or airtight containers. Make sure to leave some space at the top for toppings.
