Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon salt

1 cup canned pumpkin puree (not pumpkin pie filling)

1 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

For the Cream Cheese Filling:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, spices (cinnamon, ginger, nutmeg, cloves), and salt until well combined.

Combine Wet Ingredients: In a separate bowl, mix together the pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth and cohesive.

Combine Mixtures: Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Be careful not to overmix; some lumps are okay.

Bake the Cookies: Using a medium cookie scoop or a tablespoon, drop heaping mounds of batter onto the prepared baking sheets, leaving about 2 inches between each mound. Bake for 12-15 minutes, or until the edges are set and the centers spring back slightly when touched.

Cool the Cookies: Remove from the oven and allow the whoopie pie halves to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Prepare the Filling: In a medium bowl, beat the softened cream cheese and butter together until creamy and smooth. Gradually add the powdered sugar, mixing until well incorporated. Add the vanilla extract and a pinch of salt, then mix until fluffy and smooth.

Assemble the Whoopie Pies: Once the cookies are completely cool, spread or pipe a generous layer of cream cheese filling onto the flat side of one cookie. Top with another cookie, flat side down, creating a sandwich. Repeat until all cookies are assembled.

Chill and Serve: For the best flavor, refrigerate the assembled whoopie pies for at least 30 minutes before serving. Enjoy your delicious Pumpkin Spice Whoopie Pies!
