1 cup all-purpose flour

1 cup whole wheat flour

2 tablespoons brown sugar

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon ground nutmeg

½ teaspoon salt

1 cup pure pumpkin puree (not pumpkin pie filling)

2 large eggs

1 ½ cups buttermilk

4 tablespoons melted butter (plus extra for cooking)

For the Maple Yogurt Dip:

1 cup plain Greek yogurt

¼ cup pure maple syrup

1 teaspoon vanilla extract

½ teaspoon ground cinnamon (optional)

Preheat the Waffle Maker: Plug in your Belgian or traditional waffle maker to preheat according to the manufacturer’s instructions.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      Prepare Wet Ingredients: In another bowl, mix together the pumpkin puree, eggs, buttermilk, and melted butter until smooth.

        Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined. Be careful not to overmix; some lumps are okay.
