Ingredients

2 cups cooked pasta (penne or fettuccine works best)

1 pound boneless, skinless chicken breasts, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: steamed broccoli or spinach for added greens

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes or until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.

Make the Alfredo Sauce: In the same skillet over medium heat, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream, stirring constantly, and bring to a gentle simmer.

Add Cheese: Slowly whisk in the grated Parmesan cheese until fully melted and the sauce becomes creamy. If the sauce is too thick, you can add a splash of pasta water to achieve your desired consistency.

Combine Ingredients: Return the cooked chicken to the skillet and add the drained pasta. Toss everything together until the pasta is well-coated in the Alfredo sauce. If using, add the steamed broccoli or spinach at this stage.

Serve: Divide the Chicken Alfredo mixture into bowls. Garnish with freshly chopped parsley and an extra sprinkle of Parmesan if desired.
