Ingredients

12 jumbo pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 egg

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 jar (24 oz) marinara sauce

Fresh basil leaves for garnish (optional)

Instructions

Cook the Shells: In a large pot of salted boiling water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.

Prepare the Filling: In a mixing bowl, combine the ricotta cheese, chopped spinach, Parmesan cheese, 1/2 cup of mozzarella cheese, egg, minced garlic, salt, and black pepper. Mix well until fully combined.

Fill the Shells: Preheat your oven to 375°F (190°C). Take each cooked pasta shell and fill them generously with the spinach and ricotta mixture using a spoon or spatula.

Assemble in Baking Dish: Spread a thin layer of marinara sauce on the bottom of a baking dish. Arrange the stuffed shells open-side-up in the dish. Pour the remaining marinara sauce over the top of the shells, ensuring they are well-coated.

Top with Cheese: Sprinkle the remaining 1/2 cup of mozzarella cheese evenly over the stuffed shells.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve and Garnish: Once out of the oven, let the shells cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy!
