2 cups cooked chicken, shredded (can use rotisserie for convenience)

1 cup BBQ sauce (choose your favorite brand or homemade)

2 large sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

Salt and pepper, to taste

4 large whole wheat tortillas

1 cup fresh spinach leaves

1/2 cup red onion, thinly sliced

1/2 cup shredded cheese (cheddar or mozzarella)

Optional: sliced jalapeños for heat

Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread them on a baking sheet in a single layer. Roast for about 25-30 minutes or until tender and slightly caramelized, stirring halfway through.

    Prepare the BBQ Chicken: While the sweet potatoes are roasting, combine the shredded chicken with BBQ sauce in a saucepan. Heat over medium heat until warmed through, about 5-7 minutes. Stir well to coat the chicken evenly with the sauce.
