Ingredients

For the Beef:

1 lb ground beef (80/20 for optimal flavor)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil

2 tablespoons tomato paste

½ cup beef broth

For the Avocado Crema:

1 ripe avocado

1 cup sour cream or Greek yogurt

1 tablespoon lime juice

1 small clove garlic

Salt and pepper to taste

For Assembly:

Small corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sliced radishes or diced tomatoes (optional)

Instructions

Prepare the Beef:

    - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.

      - Add the minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Stir and cook for another minute until fragrant.

        - Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes.

          - Stir in the tomato paste and beef broth. Allow the mixture to simmer for 5 minutes until it's slightly thickened. Remove from heat.

            Make the Avocado Crema:

              - In a blender or food processor, combine the avocado, sour cream (or Greek yogurt), lime juice, garlic, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste. If it's too thick, you can add a splash of water to achieve the desired consistency.

                Assemble the Tacos:

                  - Warm the tortillas in a dry skillet for about 30 seconds on each side or until pliable.

                    - To assemble, place a generous spoonful of the beef mixture onto each tortilla. Drizzle with avocado crema and sprinkle with fresh cilantro. Optionally, add sliced radishes or diced tomatoes for extra crunch.

                      Serve:

                        - Serve the tacos with lime wedges on the side for squeezing over the top. Enjoy while warm!
