Quick Beef Tacos with Fresh Avocado Salsa

For the Beef Tacos:

1 lb ground beef

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp taco seasoning

1/2 tsp salt

1/4 tsp black pepper

8 small corn or flour tortillas

1 cup shredded lettuce (for garnish)

1 cup shredded cheese (cheddar or Mexican blend) (for garnish)

For the Fresh Avocado Salsa:

2 ripe avocados, diced

1 medium tomato, diced

1/4 red onion, finely chopped

1 lime, juiced

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Cook the Beef: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 1 minute.

    Season the Beef: Add the ground beef to the skillet. Sprinkle in the taco seasoning, salt, and black pepper. Cook, breaking up the meat with a spatula, until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.

      Prepare the Avocado Salsa: In a medium bowl, combine the diced avocados, tomato, red onion, lime juice, and chopped cilantro. Season with salt and pepper to taste. Gently mix to combine, being careful not to mash the avocados too much. Set aside.

        Warm the Tortillas: In a separate skillet or over an open flame, warm the tortillas for about 30 seconds on each side until pliable. Alternatively, you can microwave them wrapped in a damp paper towel for about 20-30 seconds.

          Assemble the Tacos: Place a generous portion of the cooked beef mixture onto each tortilla. Top with shredded lettuce, cheese, and a spoonful of the fresh avocado salsa.
