1 lb (450g) ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 tbsp chili powder

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

8 small corn or flour tortillas

Olive oil for cooking

For the Fresh Salsa:

2 large tomatoes, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and minced (optional)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For Toppings:

Shredded lettuce

Diced avocado

Crumbled queso fresco or shredded cheese

Sour cream (optional)

Prepare the Salsa: In a medium bowl, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld while you prepare the beef.
