2 cups cooked chicken, shredded or diced

1 bell pepper (red, green, or yellow), sliced

1 small onion, thinly sliced

1 teaspoon olive oil

1 teaspoon taco seasoning

4 large flour tortillas

1 cup shredded cheese (cheddar or a blend)

1/2 cup salsa (optional)

Sour cream or guacamole for dipping (optional)

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced bell pepper and onion. Sauté for about 3-4 minutes, or until the vegetables are soft and slightly caramelized.

    Season the Chicken: Add the cooked chicken and taco seasoning to the skillet. Stir well to combine, and cook for an additional 2-3 minutes until everything is warmed through and well mixed.

      Prepare the Quesadillas: Heat another skillet or a griddle over medium heat. Place one flour tortilla in the skillet, and sprinkle half of it with a portion of the shredded cheese, followed by a generous scoop of the chicken and vegetable mixture. Top with a little more cheese, then fold the tortilla in half to create a quesadilla.

        Cook the Quesadilla: Cook for about 2-3 minutes on one side until golden brown and the cheese starts to melt. Carefully flip the quesadilla to the other side and cook for another 2-3 minutes. Once both sides are golden and crispy, transfer to a cutting board.

          Repeat the Process: Repeat steps 3 and 4 for the remaining tortillas and filling. You can keep the cooked quesadillas warm in a low oven if needed.

            Serve: Cut the quesadillas into wedges and serve with salsa, sour cream, or guacamole on the side for dipping. Encourage kids to make their own dipping choices!
