Ingredients

4 large flatbreads or pita bread

2 cups cooked turkey, shredded or sliced

1 cup cranberry sauce (homemade or store-bought)

1 cup cream cheese, softened

1 cup spinach leaves, roughly chopped

1/2 cup red onion, thinly sliced

1/2 cup shredded mozzarella cheese

1 tablespoon olive oil

Salt and pepper, to taste

Fresh thyme or parsley for garnish (optional)

Instructions

Preheat the oven: Preheat your oven to 400°F (200°C).

Prepare the cream cheese spread: In a small bowl, mix the softened cream cheese with a pinch of salt and pepper. This will enhance the flavor of your spread.

Assemble the flatbreads: Lay out the flatbreads or pita bread on a clean surface. Spread a generous layer of the cream cheese mixture over each flatbread.

Add turkey and toppings: Evenly distribute the shredded turkey over the cream cheese layer on each flatbread. Spoon the cranberry sauce on top of the turkey, and then add the chopped spinach and sliced red onion.

Top with cheese: Sprinkle shredded mozzarella cheese over each flatbread to create a melty, cheesy topping.

Drizzle with olive oil: Lightly drizzle olive oil over the assembled flatbreads for added moisture and flavor.

Bake: Place the flatbreads on a baking sheet and bake in the preheated oven for about 10-12 minutes, or until the edges are crispy and the cheese is bubbly and golden.

Garnish and serve: Once out of the oven, let them cool for a minute. If desired, sprinkle with fresh thyme or parsley for added flavor and color. Slice into wedges and serve warm.
