1 medium zucchini, sliced into rounds

1 bell pepper (any color), cut into bite-sized squares

1 red onion, cut into wedges

1 cup cherry tomatoes

8 oz feta cheese, cubed

3 tablespoons olive oil

2 tablespoons balsamic vinegar

2 teaspoons dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Skewers (if using wooden skewers, soak in water for 30 minutes prior)

Instructions
 

Preheat the Grill: Heat your grill to medium-high (about 375°F/190°C). If you're using a grill pan on the stovetop, ensure it's well-heated.

    Prepare the Marinade: In a bowl, whisk together olive oil, balsamic vinegar, oregano, garlic powder, salt, and pepper.

      Marinate the Vegetables: In a large mixing bowl, combine the sliced zucchini, bell pepper, red onion, and cherry tomatoes. Pour the marinade over the vegetables and toss to coat evenly. Let them sit for about 10-15 minutes for enhanced flavor.

        Assemble the Kebabs: Thread the marinated vegetables and feta cheese onto the skewers, alternating between the veggies and feta cubes. Make sure not to overcrowd them for even grilling.

          Grill the Kebabs: Place the assembled kebabs on the preheated grill. Cook for about 8-10 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.

            Serve: Remove the kebabs from the grill and let them rest for a minute or two. Drizzle with any remaining marinade before serving.
