Quick Shrimp Tacos with Avocado Lime Sauce

For the Shrimp Tacos:

1 lb shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup shredded cabbage (green or purple)

1/2 cup diced tomatoes

Fresh cilantro, for garnish

Lime wedges, for serving

For the Avocado Lime Sauce:

1 ripe avocado

1/4 cup Greek yogurt (or sour cream)

Juice of 1 lime

1 clove garlic, minced

Salt, to taste

Water, as needed to thin the sauce

Instructions
 

Toast the Tortillas:

    - Heat a non-stick skillet over medium heat. Lightly toast the corn or flour tortillas for about 30 seconds on each side until pliable and warm. Set aside.

      Prepare the Shrimp:

        - In a medium bowl, combine the shrimp, olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Toss until the shrimp are evenly coated with the spice mixture.

          Cook the Shrimp:

            - In the same skillet used for the tortillas, increase the heat to medium-high. Add the seasoned shrimp and cook for about 2-3 minutes on each side or until they turn pink and opaque. Avoid overcooking. Remove from heat.

              Make the Avocado Lime Sauce:

                - In a blender or food processor, combine the avocado, Greek yogurt, lime juice, minced garlic, and salt. Blend until smooth. If the sauce is too thick, add a little water to reach desired consistency.
