2 boneless, skinless chicken breasts (about 1 pound)

Salt and freshly ground black pepper (to taste)

1/4 cup all-purpose flour (for dredging)

2 tablespoons olive oil

2 tablespoons unsalted butter

1/4 cup fresh lemon juice (about 2 lemons)

1/2 cup low-sodium chicken broth

1/4 cup capers, rinsed and drained

1/4 cup fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions
 

Prep the Chicken: Begin by placing the chicken breasts between two pieces of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound them to an even thickness of about 1/2 inch. This ensures even cooking. Season both sides of the chicken with salt and pepper.

    Dredge in Flour: On a plate, spread the flour evenly. Dredge each chicken breast in the flour, shaking off the excess. This will give the chicken a nice golden crust when cooked.

      Heat the Skillet: In a large skillet, heat the olive oil and 1 tablespoon of the butter over medium-high heat. Once the oil is shimmering, carefully add the dredged chicken breasts.

        Cook the Chicken: Cook the chicken for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Once cooked, transfer the chicken to a plate and cover it loosely with foil to keep warm.

          Make the Sauce: In the same skillet, reduce the heat to medium and add the lemon juice, scraping up any browned bits from the bottom of the pan. This adds flavor to the sauce. Next, pour in the chicken broth and add the capers. Allow the mixture to simmer for about 3 minutes until slightly reduced.

            Finish the Sauce: Remove the skillet from heat and swirl in the remaining tablespoon of butter until melted and the sauce is velvety. Taste and adjust seasoning with more salt and pepper if necessary.

              Serve: Return the chicken breasts to the skillet, spooning the caper lemon sauce over the top. Let it sit for a minute to absorb the flavors.
