Ingredients

1 lb (450g) boneless, skinless chicken thighs, sliced into thin strips

2 cups mixed vegetables (bell peppers, broccoli, and snap peas)

3 tablespoons teriyaki sauce

1 tablespoon soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece of ginger, grated

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (optional, for garnish)

Salt and pepper to taste

Cooked rice or noodles (for serving)

Instructions

Marinate the Chicken: In a bowl, combine the sliced chicken, teriyaki sauce, soy sauce, minced garlic, and grated ginger. Let it marinate for about 15 minutes while you prepare the vegetables.

Prepare the Veggies: Wash and chop your mixed vegetables into bite-sized pieces.

Heat the Pan: In a large skillet or wok, heat the sesame oil over medium-high heat until shimmering.

Cook Chicken: Add the marinated chicken to the hot skillet. Stir-fry for about 5-7 minutes, or until the chicken is cooked through and lightly browned. Make sure to stir frequently to ensure even cooking.

Add Vegetables: Once the chicken is nearly cooked, add the mixed vegetables to the skillet. Stir everything together and cook for an additional 3-5 minutes, or until the veggies are tender-crisp.

Season: Taste and season the stir-fry with salt and pepper if needed.

Serve: Serve the stir-fry hot over a bed of cooked rice or noodles. Garnish with chopped green onions and sprinkle with sesame seeds for an extra crunch and flavor.
