2 salmon fillets (about 6 oz each)

1/4 cup soy sauce (low sodium preferred)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1 cup jasmine or basmati rice

2 cups water or broth (for cooking rice)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Steamed broccoli or snap peas (optional, for serving)

Instructions
 

Marinate the Salmon: In a small bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger. Place the salmon fillets in a shallow dish or a resealable bag and pour the marinade over them. Let it marinate for about 15 minutes while you prepare the rice.

    Cook the Rice: Rinse the jasmine or basmati rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water (or broth). Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is tender and water is absorbed. Remove from heat, fluff with a fork, and cover again to keep warm.
