1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 zucchini, diced

1 cup corn (fresh or frozen)

1 can (15 oz) black beans, rinsed and drained

1 packet taco seasoning

Salt and pepper, to taste

8 taco shells or tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 avocado, sliced

1 cup shredded cheese (cheddar or Mexican blend)

Salsa and sour cream, for serving

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat.

    Cook the Turkey: Add the ground turkey to the skillet, breaking it up with a spoon. Cook until browned and fully cooked, about 6-7 minutes.

      Sauté Vegetables: Add the chopped onion and garlic to the skillet. Sauté for 2-3 minutes until the onion becomes translucent.

        Mix in Veggies: Stir in the diced bell pepper, zucchini, corn, and black beans. Cook for another 5 minutes, until the vegetables are tender.

          Season the Mixture: Add the taco seasoning to the skillet along with a splash of water (about 1/4 cup). Stir until well combined. Simmer for 2-3 minutes until heated through. Taste and add salt and pepper as needed.

            Prepare the Taco Shells: While the turkey mixture is simmering, warm your taco shells or tortillas according to package instructions, either in the oven or microwave.

              Assemble Tacos: Fill each taco shell with the turkey and veggie mixture. Top with shredded lettuce, diced tomatoes, avocado slices, and cheese.

                Serve: Serve the tacos with salsa and sour cream on the side. Enjoy your delicious and nutritious meal!
