4 whole wheat tortillas

1 cup shredded mozzarella cheese

½ cup black beans, rinsed and drained

½ cup corn (fresh, frozen, or canned)

½ cup bell peppers (mix of red, yellow, and green), diced

½ cup spinach, chopped

1 teaspoon taco seasoning or cumin (optional)

Olive oil or butter for cooking

Salsa or guacamole for dipping

Instructions
 

Prep the Vegetables: In a mixing bowl, combine the black beans, corn, diced bell peppers, and chopped spinach. If using, add in the taco seasoning or cumin for a touch of flavor.

    Warm the Tortillas: Heat a skillet over medium heat. Place one tortilla on the skillet and let it warm for about 30 seconds.

      Add Cheese and Veggies: Sprinkle half of the tortilla with about ¼ cup of shredded mozzarella cheese. Spoon half of the veggie mixture on top of the cheese, then add another ¼ cup of cheese over the veggies.

        Fold & Cook: Fold the tortilla in half to create a quesadilla. Cook for 2-3 minutes on one side until golden and crispy, then carefully flip and cook for another 2-3 minutes on the other side. Adjust the heat if necessary to avoid burning.

          Repeat: Repeat steps 2-4 with the second tortilla and remaining filling ingredients.

            Slice and Serve: Once cooked, transfer to a cutting board and allow to cool for a minute before slicing into wedges. Serve with salsa or guacamole for dipping.
