Rainbow Summer Rolls

8 rice paper wrappers

1 cup cooked vermicelli noodles, cooled

1 cup red cabbage, finely shredded

1 cup carrots, julienned

1 cup cucumber, julienned

1 cup bell peppers (mix of red, yellow, and green), thinly sliced

1 ripe avocado, sliced

1 cup fresh mint leaves, torn

1 cup fresh basil leaves

1 cup bean sprouts

1/4 cup peanut butter (for dipping sauce)

2 tablespoons soy sauce (for dipping sauce)

1 tablespoon honey or maple syrup (for dipping sauce)

1 tablespoon rice vinegar (for dipping sauce)

Optional: sesame seeds, for garnish

Instructions
 

Prepare the Workspace: Gather all ingredients and a clean cutting board. Have a large shallow dish filled with warm water ready to soften the rice paper wrappers.

    Soften the Rice Paper: Dip one rice paper wrapper into the warm water for about 10-15 seconds until it becomes pliable. Carefully remove and lay it flat on a clean surface.

      Layer the Filling: In the center of the softened rice paper, layer a small handful of vermicelli noodles followed by a mix of red cabbage, carrots, cucumber, bell peppers, avocado slices, mint leaves, basil leaves, and bean sprouts. Be sure not to overfill!

        Roll the Summer Roll: Starting from the edge closest to you, gently fold the rice paper over the filling. Tuck in the sides and roll it away from you to create a tight cylinder. Repeat with the remaining wrappers and filling ingredients.

          Make the Dipping Sauce: In a small bowl, mix together the peanut butter, soy sauce, honey (or maple syrup), and rice vinegar until smooth. If too thick, you can add a little warm water to reach desired consistency.

            Serve: Arrange the rainbow summer rolls on a platter. Optionally, sprinkle sesame seeds on top of the rolls or alongside the dipping sauce for added flavor and aesthetics.

              Enjoy: Serve the summer rolls fresh with the peanut dipping sauce.
