Ranch Garlic Parmesan Chicken Skewers

1 lb boneless, skinless chicken breasts (cut into 1-inch cubes)

1/2 cup ranch dressing

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

4 cloves garlic (minced)

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon black pepper

1 teaspoon salt

Fresh parsley (chopped, for garnish)

8 wooden or metal skewers

Instructions
 

Marinate the Chicken: In a large bowl, combine the cubed chicken breasts, ranch dressing, minced garlic, olive oil, onion powder, oregano, black pepper, and salt. Mix well to ensure all the chicken is coated evenly. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes to 2 hours for maximum flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling. If using metal skewers, you can skip this step.

      Preheat the Grill: Preheat your grill to medium-high heat (around 375°F to 400°F). If you’re cooking indoors, heat a grill pan over medium heat.

        Assemble the Skewers: Take the marinated chicken pieces and thread them onto the skewers, leaving a bit of space between each piece for even cooking. You should have about 4-5 pieces of chicken per skewer.

          Grill the Skewers: Once the grill is hot, place the skewers on it. Grill for about 5-7 minutes on each side, or until the chicken is cooked through and has beautiful grill marks. (The internal temperature should reach 165°F.)

            Add the Parmesan: In the last minute of cooking, sprinkle the grated Parmesan cheese evenly over the skewers. Close the grill lid to allow the cheese to melt slightly.
