1 cup almond flour

1/2 cup rolled oats

1/4 cup coconut sugar

1/4 teaspoon salt

1/2 teaspoon baking powder

1/3 cup almond butter (smooth or crunchy, your preference)

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

1 cup fresh raspberries (or frozen, thawed and drained)

1/4 cup sliced almonds (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper, leaving a little overhang on the sides for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine the almond flour, rolled oats, coconut sugar, salt, and baking powder. Stir until well mixed.

      Add Wet Ingredients: In a separate bowl, whisk together the almond butter, maple syrup (or honey), and vanilla extract until smooth. Gradually add this mixture to the dry ingredients, stirring until a dough forms.

        Fold in Raspberries: Gently fold in the fresh raspberries, being careful not to crush them too much. You want to keep some whole for texture.

          Spread in Baking Dish: Transfer the mixture into the prepared baking dish, spreading it out evenly with a spatula. Press down lightly to compact the mixture.

            Add Topping: Sprinkle sliced almonds evenly on top of the mixture for added crunch.

              Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.

                Cool & Slice: Allow the bars to cool in the pan for about 10 minutes before lifting them out using the parchment overhang. Transfer to a wire rack to cool completely. Once cooled, slice into squares or bars.
