1 ¼ cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon cocoa powder

1 cup vegetable oil

1 cup buttermilk, room temperature

2 large eggs, room temperature

2 tablespoons red food coloring

1 teaspoon vanilla extract

1 teaspoon white vinegar

For the Cheesecake Filling:

8 oz cream cheese, softened

½ cup granulated sugar

1 large egg, room temperature

1 teaspoon vanilla extract

1 tablespoon all-purpose flour

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

2 teaspoons vanilla extract

1-2 tablespoons milk (as needed for consistency)

Prepare the Cupcake Batter: Preheat your oven to 350°F (175°C) and line a cupcake tray with cupcake liners. In a mixing bowl, sift the flour, baking soda, salt, cocoa powder, and set aside. In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until well combined.

    Combine Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix; a few lumps are okay.

      Make the Cheesecake Filling: In a separate mixing bowl, beat the softened cream cheese until smooth. Add the granulated sugar, egg, vanilla extract, and flour, mixing until creamy and well combined.

        Fill the Cupcake Liners: Pour a tablespoon of red velvet batter into each cupcake liner, followed by a tablespoon of cheesecake filling, and then top with another tablespoon of the red velvet batter, filling each liner about 2/3 full.

          Bake: Place the cupcake tray in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the red velvet portion comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

            Prepare the Frosting: In a large bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, mixing on low speed until well incorporated. Stir in the vanilla extract and adjust the consistency with milk, if needed.

              Frost the Cupcakes: Once the cupcakes are completely cooled, pipe the cream cheese frosting on top of each cupcake using a star tip or your favorite piping tip.
