2 cups cooked rice (preferably day-old for better texture)

1/2 cup grated Parmesan cheese

1/4 cup all-purpose flour (can substitute with breadcrumbs for extra crunch)

1/2 cup finely chopped fresh herbs (parsley, cilantro, and chives work well)

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika (optional, for an extra kick)

Vegetable oil for frying

Lemon wedges, for serving

Prepare the Rice Mixture:

    In a large mixing bowl, combine the cooked rice, grated Parmesan cheese, chopped herbs, onion, and minced garlic. Mix these ingredients until well combined.

      Add Bindings:

        To the rice mixture, add the flour, egg, salt, pepper, and smoked paprika. Stir until everything is well incorporated. The mixture should be sticky enough to hold its shape when formed into patties. If it feels too wet, add a little more flour.

          Shape the Patties:

            Using your hands, take a handful of the mixture and form it into a patty about 1/2 inch thick. Repeat this process until all the mixture is shaped into patties.

              Fry the Patties:

                In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. Once the oil is hot, carefully place the patties in the skillet, making sure not to overcrowd the pan. Fry them in batches if necessary.

                  Cook Until Golden:

                    Fry the patties for about 4-5 minutes on each side, or until they are golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain any excess oil.

                      Serve:
