1 cup (170g) dark chocolate (70% cocoa or higher), chopped

1/2 cup (113g) unsalted butter

1/2 cup (100g) granulated sugar

1/4 cup (50g) packed light brown sugar

2 large eggs

2 large egg yolks

1 teaspoon pure vanilla extract

1/2 cup (65g) all-purpose flour

1/4 teaspoon salt

Powdered sugar, for dusting

Optional: ice cream or whipped cream, for serving

Preheat the Oven: Preheat your oven to 425°F (220°C). Grease a standard muffin tin with non-stick cooking spray or line with paper liners.

    Melt Chocolate and Butter: In a heatproof bowl, combine the chopped dark chocolate and unsalted butter. Set the bowl over a pot of simmering water (double boiler) or microwave in 30-second intervals, stirring until smooth and melted. Let it cool slightly.

      Mix Sugars: In a large mixing bowl, whisk together the granulated sugar and light brown sugar with the melted chocolate mixture until well combined.

        Add Eggs: Add the eggs, yolks, and vanilla extract to the chocolate mixture. Whisk until pale and fluffy, about 1-2 minutes.

          Incorporate Dry Ingredients: Sift the all-purpose flour and salt directly over the wet mixture. Gently fold the flour into the chocolate batter until just combined. Be careful not to overmix; a few lumps are okay.

            Fill Muffin Tins: Spoon the batter into the prepared muffin tins, filling each cup about 3/4 full.

              Bake: Bake in the preheated oven for 10-12 minutes. The muffins are done when the edges are set, but the center is still soft.

                Cool Slightly: Remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then, gently run a knife around the edges and carefully invert them onto a wire rack to cool slightly more.
