2 medium acorn squashes

3 tablespoons olive oil

1/4 cup pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

Freshly ground black pepper to taste

1/4 cup chopped pecans (optional for garnish)

Fresh thyme leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Squash: Carefully cut the acorn squashes in half from top to bottom. Use a spoon to scoop out the seeds and stringy insides.

      Make the Glaze: In a small bowl, whisk together the olive oil, maple syrup, ground cinnamon, nutmeg, salt, and a dash of black pepper until well combined.

        Coat the Squash: Place the acorn squash halves cut side up on a baking sheet lined with parchment paper. Brush the maple glaze generously over the cut sides of the squash, reserving a little glaze for later.

          Roast the Squash: Roast the squash halves in the preheated oven for about 25-30 minutes, or until they are tender and the edges are caramelized. Halfway through roasting, drizzle the remaining glaze over the squash.

            Add the Pecans: If using, sprinkle the chopped pecans over the squash during the last 5 minutes of roasting to toast them lightly.

              Serve: Remove the squash from the oven and let it cool slightly. Serve warm, topped with fresh thyme leaves for a burst of color and flavor if desired.
