Roasted Carrot & Goat Cheese Flatbread

Ingredients
  

1 large whole wheat flatbread or pizza dough (store-bought or homemade)

4 medium carrots, peeled and cut into thin strips

2 tablespoons olive oil

Salt and black pepper, to taste

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 cup goat cheese, crumbled

1/4 cup balsamic glaze

1/4 cup fresh arugula

Optional: red pepper flakes for a kick

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Carrots:

      - In a large bowl, toss the carrot strips with olive oil, salt, pepper, and thyme.

        - Spread the carrots in a single layer on a baking sheet lined with parchment paper.

          - Roast in the preheated oven for about 20-25 minutes, or until they are tender and caramelized, stirring halfway through.

            Prepare the Flatbread:

              - While the carrots are roasting, place the flatbread or pizza dough on a baking sheet or pizza stone.

                - Optionally, brush the dough lightly with olive oil for added flavor.

                  Assemble the Flatbread:

                    - Once the carrots are done, remove them from the oven and set aside to cool slightly.

                      - Evenly scatter the roasted carrot strips over the flatbread.

                        - Crumble the goat cheese on top of the carrots.

                          Bake the Flatbread:

                            - Place the topped flatbread in the oven and bake for an additional 10-15 minutes, or until the cheese is slightly melted and the edges of the flatbread are crispy.
