Roasted Cauliflower Tacos

1 large head of cauliflower, cut into small florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

8 small corn or flour tortillas

1 cup red cabbage, finely shredded

1 ripe avocado, sliced

1/2 cup fresh cilantro leaves

1 lime, cut into wedges

Optional: 1/2 cup crumbled feta cheese or queso fresco

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.

    Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, cayenne pepper, salt, and black pepper until well coated.

      Roast the Cauliflower: Spread the seasoned cauliflower evenly on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, tossing halfway through for even cooking.

        Warm the Tortillas: While the cauliflower is roasting, warm the tortillas. You can either place them on a dry skillet over medium heat for about 30 seconds on each side or wrap them in aluminum foil and warm them in the oven for the last 10 minutes of the cauliflower roasting time.

          Assemble the Tacos: Once the cauliflower is roasted, assemble your tacos by placing a generous scoop of roasted cauliflower in each tortilla. Top with shredded red cabbage, avocado slices, fresh cilantro leaves, and crumbled feta cheese, if using.
