Ingredients

2 cans (15 oz each) chickpeas (garbanzo beans), drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon cayenne pepper (adjust to taste)

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons nutritional yeast (optional, for a cheesy flavor)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Chickpeas: Drain and rinse the chickpeas under cold water. Spread them out on a clean kitchen towel and gently pat them dry, removing as much moisture as possible. This will help them get crunchy in the oven.

Season the Chickpeas: In a large mixing bowl, combine the dried chickpeas and olive oil. Sprinkle in the garlic powder, smoked paprika, cumin, cayenne pepper, salt, and black pepper. If using, add the nutritional yeast. Toss everything together until the chickpeas are well-coated.

Arrange on Baking Sheet: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Make sure not to overcrowd them; this will ensure they roast instead of steam.

Roast in the Oven: Place the baking sheet in the preheated oven and roast the chickpeas for about 25-30 minutes, stirring every 10 minutes to ensure even cooking and browning. They should be golden brown and crispy when done.

Cool and Serve: Remove the chickpeas from the oven and let them cool on the baking sheet for a few minutes. They will continue to crisp up as they cool. Serve them warm or at room temperature as a snack, or use them as a crunchy topping for salads and soups.
