For the Roasted Chickpeas:

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon cumin

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

Salt to taste

For the Wraps:

4 large whole wheat tortillas or wraps

1 cup fresh spinach or mixed greens

1 large tomato, diced

1 small red onion, thinly sliced

Feta cheese, crumbled (optional)

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Chickpeas: In a bowl, toss the drained and rinsed chickpeas with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper until evenly coated. Spread them out in a single layer on the prepared baking sheet.

      Roast the Chickpeas: Bake in the preheated oven for 20-25 minutes, shaking the pan halfway through, until they are golden brown and crunchy. Set aside to cool.

        Make the Tzatziki Sauce: In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and a pinch of salt. Mix well until smooth and creamy. Adjust seasoning to taste and refrigerate until ready to use.
