2 medium-sized russet potatoes

1 whole bulb of garlic

2 ripe avocados

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon smoked paprika

Juice of 1 lemon

Fresh cilantro or parsley for garnish

Crushed red pepper flakes (optional for heat)

4 slices of artisanal bread (sourdough or whole grain preferred)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Garlic: Cut the top off the garlic bulb to expose the tops of the cloves. Drizzle with a little olive oil and wrap it in aluminum foil. Place it on a baking sheet and roast in the preheated oven for 30-35 minutes, until soft and fragrant.

      Prepare the Potatoes: While the garlic is roasting, wash and scrub the potatoes. Cut them into thin slices (about 1/4 inch thick). Toss the potato slices with 1 tablespoon of olive oil, salt, pepper, and smoked paprika in a mixing bowl.

        Roast the Potatoes: Spread the seasoned potato slices in a single layer on another baking sheet. Roast in the oven for 20-25 minutes, flipping halfway through, until crispy and golden brown.

          Prepare the Avocado Spread: In a mixing bowl, scoop out the flesh of the ripe avocados. Squeeze in the lemon juice, add a pinch of salt and pepper, and squeeze out the roasted garlic cloves from their skins. Mash everything together with a fork until creamy and smooth.
