Roasted Garlic Mashed Potatoes

2 lbs russet potatoes, peeled and cubed

1 whole bulb garlic

4 tablespoons unsalted butter

1 cup whole milk (or cream for extra richness)

Salt, to taste

Freshly ground black pepper, to taste

2 tablespoons sour cream (optional, for tanginess)

Chopped fresh chives or parsley, for garnish

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the whole bulb of garlic to expose the individual cloves. Drizzle with a tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for about 30-40 minutes until the cloves are soft and caramelized. Let cool.

        Cook the Potatoes:

          - While the garlic is roasting, place the peeled and cubed potatoes in a large pot. Cover with cold water and add a generous pinch of salt.

            - Bring to a boil over medium-high heat, then reduce to a simmer. Cook until the potatoes are tender, about 15-20 minutes. Drain well.

              Combine Ingredients:

                - Squeeze the roasted garlic cloves out of their skins into a bowl, mash them lightly with a fork.

                  - In the same pot used for the potatoes, add the drained potatoes back in, along with the mashed garlic, butter, and milk.

                    - Mash everything together using a potato masher until the mixture is creamy and smooth. For an extra creamy texture, you can use a hand mixer on low speed.

                      Season:

                        - Stir in the sour cream (if using). Taste and season with salt and freshly ground black pepper to your preference. The creaminess can also be adjusted by adding more milk or butter.

                          Serve:

                            - Transfer the mashed potatoes to a serving bowl. Garnish with chopped chives or parsley for a pop of color. Optionally, add a pat of butter on top for added flavor.
