Roasted Garlic Mashed Sweet Potatoes

2 large sweet potatoes (about 2 pounds)

1 whole head of garlic

2 tablespoons olive oil

4 tablespoons unsalted butter

1/2 cup milk (or plant-based milk for a vegan option)

Salt, to taste

Pepper, to taste

Fresh chives or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Roast the Garlic: Slice the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap it in aluminum foil, and place it on a baking sheet. Roast in the oven for 30-35 minutes, or until the cloves are soft and caramelized.

      Prepare Sweet Potatoes: While the garlic is roasting, peel and chop the sweet potatoes into evenly-sized chunks. Place them in a large pot and cover with water. Add a pinch of salt and bring to a boil.

        Cook Sweet Potatoes: Boil the sweet potatoes for about 15-20 minutes or until fork-tender. Drain the potatoes and return them to the pot.

          Mash the Potatoes: Once the garlic is roasted and cool enough to handle, squeeze the soft garlic cloves out of their skins into the pot with the sweet potatoes. Add the butter and milk.

            Combine Ingredients: Mash the sweet potatoes and garlic together using a potato masher or a hand mixer until smooth and creamy. Taste and season with salt and pepper according to your preference.

              Serve: Transfer the mashed sweet potatoes to a serving dish and garnish with freshly chopped chives or parsley if desired. Drizzle a little extra olive oil on top for enhanced flavor.
