Roasted Tomato Feta Pasta Salad

2 cups cherry tomatoes

1 block (8 oz) feta cheese

3 tablespoons olive oil

2 teaspoons dried oregano

Salt and freshly ground black pepper to taste

12 oz pasta (your choice, preferably penne or fusilli)

1 cup fresh spinach, chopped

½ cup red onion, thinly sliced

¼ cup fresh basil, chopped

2 tablespoons balsamic vinegar

¼ teaspoon red pepper flakes (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tomatoes and Feta: On a baking sheet, place the cherry tomatoes in the center. Crumble the feta cheese around the tomatoes. Drizzle with 2 tablespoons of olive oil, dried oregano, salt, and black pepper. Toss gently to combine.

      Roast: Roast the tomatoes and feta in the preheated oven for 20-25 minutes, or until the tomatoes are blistered and the feta is golden and soft.

        Cook the Pasta: Meanwhile, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool quickly.

          Combine Ingredients: In a large mixing bowl, combine the cooled pasta, roasted tomatoes and feta (along with any juices from the baking sheet), chopped spinach, sliced red onion, and fresh basil.

            Dress the Salad: In a small bowl, whisk together the remaining 1 tablespoon of olive oil, balsamic vinegar, red pepper flakes (if using), and a pinch of salt and pepper. Drizzle over the pasta salad and toss well to coat.

              Serve: Taste and adjust the seasoning if needed. Serve the salad at room temperature or chilled. It can be refrigerated for up to 3 days for best flavor. Enjoy!
