Roasted Veggie Hummus Pinwheels

4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 medium zucchini, thinly sliced

1 red bell pepper, thinly sliced

1 carrot, julienned

1 cup baby spinach leaves

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Optional: feta cheese crumbles for serving

Roast the Veggies: Preheat oven to 400°F (200°C). On a baking sheet, arrange the zucchini, red bell pepper, and carrots. Drizzle with olive oil, sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly. Roast for 20 minutes, or until the vegetables are tender and slightly caramelized. Remove from oven and let cool slightly.

    Prepare Tortillas: Lay a tortilla flat on a clean surface. Spread about 1/4 cup of hummus evenly over the tortilla, leaving about a 1-inch border around the edges.

      Assemble Pinwheels: On top of the hummus, layer a handful of baby spinach leaves, followed by an even distribution of the roasted veggies.

        Roll It Up: Starting from one edge, carefully roll the tortilla away from you, keeping the filling tight but not overly compressed. Once you reach the end, seal the edge with a little bit of hummus.

          Slice and Serve: Using a sharp knife, cut the rolled tortilla into bite-sized pinwheels (about 1-2 inches thick). Arrange on a platter and sprinkle with feta cheese if desired.
