Rustic Blackberry Galette with Flaky Crust

Ingredients
  

For the Flaky Crust:

1 ½ cups all-purpose flour

½ teaspoon salt

1 tablespoon granulated sugar

½ cup unsalted butter, cold and cubed

4-6 tablespoons ice water

For the Blackberry Filling:

2 cups fresh blackberries

¼ cup granulated sugar (adjust to taste)

1 tablespoon cornstarch

1 teaspoon lemon juice

1 teaspoon vanilla extract

1 tablespoon butter, cut into small pieces (for topping)

For Assembly:

1 egg (for egg wash)

1 tablespoon coarse sugar (for sprinkling)

Instructions
 

Make the Flaky Crust:

    - In a large mixing bowl, combine the flour, salt, and sugar. Mix well.

      - Add the cold, cubed butter into the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs with pea-sized pieces of butter.

        - Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Avoid overmixing.

          - Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.

            Prepare the Blackberry Filling:

              - In a medium bowl, combine the blackberries, sugar, cornstarch, lemon juice, and vanilla extract. Gently mix to combine, and let it sit while the crust chills.

                Preheat the Oven:

                  - Preheat your oven to 375°F (190°C).

                    Roll Out the Dough:

                      - On a lightly floured surface, roll out the chilled dough into a rough circle about 12 inches in diameter and about 1/8 inch thick. Carefully transfer it to a parchment-lined baking sheet.

                        Assemble the Galette:

                          - Spoon the blackberry filling into the center of the rolled-out dough, leaving a 2-inch border around the edges.

                            - Fold the edges of the dough over the filling, pleating it as you go to create a rustic look.

                              - Dot the filling with small pieces of butter.

                                Add Egg Wash:

                                  - In a small bowl, whisk the egg and brush it over the exposed crust. This will give the crust a beautiful golden color.

                                    - Sprinkle coarse sugar over the crust for added sweetness and crunch.

                                      Bake the Galette:

                                            - Remove the galette from the oven and let it cool for about 10-15 minutes before slicing. This will allow the filling to set slightly.
